Pain de Mie. It’s our favorite house bread - soft and pillowy, made rich with milk, butter, and eggs. It's baked in a lidded Pullman pan for delightfully square slices, perfect for toast points to dip in runny egg, or for making fancy tea sandwiches. It’s also easy to slice super thin, so it makes a great club sandwich.
